Cabbage was on sale at my local grocer last week, so I’ve been including it in a lot of different meals. It has been fun experimenting with new recipes and ideas using cabbage.
My weekly meal planning is completely decided by whatever I find ON SALE. This way, we’re always consuming an abundance of fresh produce while keeping our family budget in check.
Cabbage is a very underrated vegetable.
It’s very LOW in calories, HIGH in nutrients and fiber. Definitely, a vegetable that we could all be eating more of!

These are the clean ingredients that come together to make this cilantro lime coleslaw delicious and nutritious:

Cilantro Lime Slaw:
- 6 cups freshly shredded green cabbage
- 2 large carrots, shredded
- 4 celery ribs, thinly sliced
- 1 bunch fresh cilantro, chopped
- 4 green onions, sliced
- 2 cups fresh or frozen organic corn kernels
- 1/4 cup crumbled cotija cheese
Dressing:
- 1/4 cup plain Greek yogurt
- 1/4 cup homemade mayonnaise
- 1 Tbsp homemade taco seasoning
- 1 fresh lime, juiced
- sea salt and black pepper, to taste
How to make Cilantro Lime Coleslaw:
Step 1. Shred your cabbage and carrots into a large salad bowl.

Step 2. Add the celery, cilantro, green onions, and corn to the bowl, then in a small separate bowl, whisk together all of the ingredients for your dressing.

Step 3. Pour dressing over the cabbage and toss very well to coat.

Step 4. Sprinkle with cotija cheese and enjoy!
Stays good in the fridge for up to 2 days.

- You can eat this right away, but it tastes even better if it has time to marinate for an hour or so in the refrigerator first.
- Use freshly squeezed lime juice for the best flavor and nutrients!

Customizations:
Make it creamier: You can make this lime cilantro slaw even creamier by adding a bit more Greek yogurt or even doubling the dressing recipe and adding it to your desired creaminess.
Adjust the spice: Add extra spice by adding more crushed red pepper flakes, and less spicy by adding less red pepper flakes in the homemade taco seasoning mix.
Make it smokier: You can make this a smoky cilantro slaw by adding a bit of smoked paprika or by adding some adobo sauce which has a deep delicious smoky flavor and some spice.
Cabbage Substitute: If you don’t have cabbage, you can use shredded broccoli stems or Brussels sprouts.
Greek Yogurt Substitute: If you plan to substitute the Greek yogurt, I recommend either a homemade mayonnaise, or blended cottage cheese. Each of these will create a different flavor for the slaw, so do some taste testing if you change it up.
Cojita Cheese Substitute: If you can’t find cotija cheese, feta works well instead.
