15 minute Taco Dinner Skillet
{Another QUICK weeknight idea!}
Serves 4-6

What I did:
Brown 1 lb grass fed beef (or ground Turkey) on medium high heat with 1 small diced onion.
Drain well.
Ingredients:
- 1/4 cup water,
- 1, 7 oz can fire roasted, diced green chillies.
- 2 cloves garlic minced,
- A good sprinkle of cumin, sea salt & freshly ground black pepper to taste.
Let cook, stirring constantly for about 5 minutes.
Then add:
- 1 orange bell pepper, diced
- 15 oz cooked/rinsed pinto beans
- 15 oz cooked/rinsed black beans
- Kernels from one corn on the cob
Heat through, stirring for several more minutes,
Then add:
- 1 cup sliced grape tomatoes
- 1 cup diced avocado
- Sprinkle of sliced green onions
{Serve on fresh lettuce with salsa, and/or with non-gmo corn chips}
Fast food!
