Naked Burgers + Chunky Salsa
To be completely transparent, I’m not a huge burger gal…I mean, I’ll eat one at a BBQ or party where they’re *often* being served…it’s just not something I’d CHOOSE to eat on purpose.
BUT THESE.
These Naked Burgers with Chunky Salsa are a completely different story…
Full of fresh herbs, tangy feta, and grated zucchini gives em’ SO MUCH FLAVOR
The grated zucchini actually keeps your burgers moist & juicy, so that they don’t come out dry!
Juicy, tasty burgers topped with Chunky Salsa are actually speaking my kind of food language!
Cook some up ASAP while zucchini & tomatoes are ripe and plentiful!
Makes about 4 servings
Ingredients:
- 1 small zucchini, grated
- 1 lb lean ground beef or ground turkey
- 2 cloves garlic, minced
- 2 Tbsps freshly chopped parsley
- 2 Tbsps freshly chopped mint
- 1/4 cup crumbled feta cheese
- 1/2 tsp sea salt
- 1/4 tsp freshly ground pepper
- 1 Tbsp olive oil, avocado oil, or cooking oil spray
For your chunky salsa:
- 1 cup ripe tomatoes, chopped
- 1/2 red onion, diced
- a handful of fresh cilantro leaves, chopped
- 1 fresh lime, juiced
- 1/2 tsp sea salt
Optional:
- Large lettuce leaves to serve the burgers
Instructions:
In a medium mixing bowl, combine all of your ingredients for the salsa, then set aside.
Grate your zucchini and squeeze out much of the moisture (discard), then place zucchini into a large bowl.
Add in ground meat, garlic, all fresh herbs, crumbled feta, sea salt and pepper, then stir well to combine(I like to just get my hands in there to combine well).
Take about 2 large spoonfuls of your mixture and form into a burger patty, then with your thumb gently press into the middle (this helps the center cook evenly). Repeat with remaining meat.
Heat a large skillet over medium heat and drizzle with oil.
Add in the patties, and cook for about 3-4 minutes on each side, or until done to your liking. (If using ground turkey, your burger must be cooked thoroughly).
To serve, add lettuce leaves on a plate, then add your burger on top.
Add a few spoonfuls of chunky salsa and enjoy!
