Sweet Potato Meal Prep Bowls

Sweet Potato Meal Prep Bowls, is one of those recipes the whole family loves! Super versatile & customizable.

They are just super good and get everyone at my house excited about dinner! Teenagers and young adults (older adults too! 🙋‍♀️) just love this kinda thing! Especially when they get to pile on the toppings themselves.

We’ve combined the natural sweetness of sweet potatoes with the savory goodness of lean ground beef and a tangy homemade dressing. Each bite is a harmonious balance of textures and flavors that will leave you craving for more.

But what makes this recipe truly special is its impressive nutritional profile. Sweet potatoes are a rich source of vitamin A, fiber, and minerals, while lean ground beef provides a boost of protein and iron. Add to that the creamy goodness of homemade dressing made with Greek yogurt and hot sauce, and you’ve got a meal prep masterpiece that’s both delicious and nutritious!

With four generous servings, this recipe is perfect for meal prep enthusiasts looking to fuel their bodies with whole foods. Simply assemble the bowls, refrigerate or freeze, and enjoy throughout the week. The perfect solution for busy lives!

These bowls stay good in the fridge for up to 5 days. Add your toppings immediately before serving.

So go ahead, treat yourself to a Sweet Potato Meal Prep Bowl and experience the delight of a healthy, satisfying meal that’s both nourishing and delicious.

🏆All-in-all this recipe is a winner in every way!

✔️Budget-friendly.
✔️Customizable.
✔️Ultra-Tasty.
✔️Nutritious.
✔️Protein packed.
✔️Interesting. But not too interesting. Have kids? IYKYK 🤣
✔️Simple.
✔️Feeds 4 hungry people.
✔️Makes everyone happy.

🧀Cheese please:

Instead of buying pre-shredded mozzarella cheese, I like to find a block of grass-fed cheese or something made locally ON SALE and shred or grate it myself….or better yet enlist one of the kids for this duty.

Many pre-grated varieties are coated in strange additives (anti-caking & clumping garbage) that actually interfere with the natural texture and melting quality.

Homemade Mayonnaise:

4 servings

Ingredients

Sweet Potatoes:

  • 4 small, sweet potatoes, diced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • sea salt and ground pepper, to taste
  • 1 Tbsp avocado oil

Protein:

  • 1 lb. lean ground beef or bison
  • 1 medium sweet onion, diced
  • 3 fresh garlic cloves, pressed
  • sea salt and ground pepper, to taste

Homemade dressing:

  • 1/4 cup homemade mayo
  • 1/4 cup Greek yogurt
  • 2 Tbsps hot sauce
  • 1 Tbsp Dijon mustard

Toppings:

  • 1 head of lettuce, thinly sliced
  • freshly diced tomatoes
  • freshly shredded cheddar cheese
  • small red onion, diced
  • sliced or diced pickles

Instructions:

Preheat your oven to 400 degrees f. and line a large sheet pan with parchment paper.

Place your diced sweet potatoes on the pan and toss with onion powder, garlic powder, sea salt, pepper, and oil.

Arrange in a single layer. Roast for 20-25 minutes, until tender.

Meanwhile, heat a large skillet over medium heat.

Add the ground beef and cook, stirring and mincing it, for 5 minutes. Add the onion, garlic, sea salt and pepper.

Continue to cook until it begins to brown. Drain off excess grease. Cover to keep warm and set aside.

To make your sauce, add all the ingredients in a small bowl or jar and whisk until combined well.

To assemble your bowls add a layer of your roasted potatoes. Top with warm beef, then sprinkle the cheese. Drizzle with your sauce and top with desired toppings.

Enjoy!
