Seems a little different or strange at first glance but TRUST ME when I say – a thin slice of this Nut & Seed Healthy Fat Bread toasted then piled high like an open-face sandwich has been an absolute treat at our house this past week!

Almost more of a mix of a cracker and bread combined…but we’re loving it!

This bread is perfect for those seeking a gluten-free and lower carbohydrate alternative to traditional bread or crackers.

Made with an interesting mix of nuts and seeds, including cashews, walnuts, almonds, sunflower seeds, flax seeds, and sesame seeds, this bread is a total powerhouse of healthy fats, protein, fiber, and completely loaded with vitamins and minerals.

It’s also incredibly easy to make, requiring just a few simple ingredients and very minimal preparation time.

Simply mix, pour, and bake – and you’ll be enjoying a delicious, nutritious slice (or two!) in no time.

Ingredients:

  • 5 large eggs, room temperature
  • 1 tsp fine sea salt
  • 1 cup raw cashews
  • 1 cup raw walnuts
  • 1 1/4 cups raw sliced almonds
  • 1 cup raw sunflower seeds
  • 3/4 cup ground flax seeds
  • 1/2 cup sesame seeds

Instructions:

Preheat your oven to 320 degrees f. and line a loaf pan with parchment paper.

In a large bowl, crack your eggs and whisk together with the sea salt.

Add in all of the nuts and seeds then stir very well to combine.

Transfer the mixture into your prepared loaf pan and bake for 55-60 minutes.

Allow to completely cool on a rack before slicing.

Store leftovers in slices between parchment paper in a sealed container in your freezer for up to 2 months. Toast before serving.
