Creamy Garlic Chicken + Mushrooms

With only a few ingredients and simple prep, you’ll be enjoying this mouthwatering meal in no time!
Use ANY unsweetened/plain milk of your choice.
My personal favorite for this dish is unsweetened coconut milk, almond milk, or cashew milk.
Any unsweetened nut milk, coconut milk, or high-quality grass-fed cow’s milk/cream all work really well here.
Use what you personally like and have on hand.

Instructions:
- 1 1/2 lbs. skin-on chicken thighs
- 2 Tbsps Italian seasoning
- sea salt and fresh ground black pepper, to taste
- 2 Tbsps avocado oil, ghee, or olive oil divided
- 4 fresh garlic cloves, pressed, minced, or chopped
- 1 lb. small button mushrooms
- fresh thyme or other herbs of choice, to garnish
For the creamy sauce:
- 2 Tbsps gluten free flour or Arrowroot powder
- 1 1/2 cups milk of choice
- 1 tsp onion powder
Ingredients:
Whisk your sauce ingredients together in a small bowl until well combined.
Blot chicken completely dry with a paper towel.
Sprinkle your chicken with Italian seasoning, sea salt, and pepper, then rub the seasonings into the chicken on all sides. Set aside.
Heat 1 Tablespoon of the oil in a large skillet over medium high heat.
Add in your garlic and mushrooms, then sautƩ until all the liquid from the mushrooms is reduced, about 5-7 minutes. Set aside on a plate.
While your skillet is still hot, add in remaining oil, then place the chicken skin side down.
Sear on both sides until golden brown but not entirely cooked through, about 4 minutes per side.
Give your milk mixture another good whisk.
Reduce the heat to LOW, then pour over the milk mixture.
Simmer until the chicken is fully cooked and the sauce has thickened, about 8-10 minutes.
Return your mushrooms to the skillet, stir to heat through, then garnish with fresh chopped herbs.
Enjoy while hot!
