Ingredients:
- 1 Tbsp unrefined avocado oil, organic unrefined coconut oil, ghee, or olive oil
- 1 1/2 lbs. fresh sugar snap peas, trimmed
- 1 tsp red pepper flakes, or to taste
- freshly grated Parmesan cheese, to garnish
Mustard honey dressing:
- 2 Tbsps raw honey
- 2 Tbsps Dijon mustard
- 1 tsp extra virgin olive oil
- 1 fresh garlic clove, minced
- 1 fresh lemon, juice and zest
- ½ tsp sea salt
- ¼ tsp ground pepper
Instructions:
In a small bowl, whisk all of your dressing ingredients together until emulsified. Set aside.
Heat your oil of choice in a heavy-bottom skillet over high heat. Add in the snap peas in a single layer, sprinkle with chili flakes and cook just 2-3 minutes.
Flip and continue to cook the snap peas for 2-3 minutes, until charred and tender, but still crisp to the bite.
Remove your skillet from the heat.
Give your dressing another good stir then pour the dressing over the hot snap peas and toss to coat.
Sprinkle with freshly grated parmesan cheese if desired and enjoy while hot.
