Zoodles tossed with my FAVORITE Chimichurri sauce

OMG…you MUST try this sauce!
Incredible over chicken, fish, or beef…and equally amazing tossed with veggies!
This afternoon I tossed zoodles (Cleanfoodcrush.com/
spiralizer), sliced tomatoes, red onion, with this fresh Chimichurri sauce – and a sprinkle of fresh Parmigiano.
- 1 large bunch flat leaf/Italian parsley, large stems removed
- 8 cloves garlic, minced
- 3/4 cup extra virgin olive oil
- 1/4 cup red wine vinegar, or apple cider vinegar
- 2 Tbps diced red onion
- 1 Tbsp fresh lemon juice
- 1 tsp dried oregano
- 1 tsp black pepper
- 1/2 tsp sea salt
Place all ingredients in a food processor or high powered blender.
Pulse until you have a thick, smooth consistency.
