Chipotle Hummus + Crunchy Veggies 🥕🥒🌶

In folklore tales, hummus is described as one of the oldest known prepared foods.

Chipotle Hummus is a delicious and creative spin on our traditional hummus recipe.

For all of your warm-weather get-togethers, BBQs, and holiday parties! Ohhh I’m so excited about all of this!

âž¡ï¸ Rachel’s Tips:

Chipotles in adobo sauce is a great way to get that deep, smoky, spicy cooked-all-day flavor into a quick dish.

Look for simple ingredients if you’re buying a jar at the store (OR make your own! Lots of recipes online if you search them)

Chipotle chiles are dried, smoked jalapenos. Adobo is a tangy, slightly sweet red sauce.

So, the ingredients may include peppers, spices, herbs, garlic, vinegar, etc.

I like to freeze the extra peppers in adobo & sauce, in an ice cube tray for future use.

🋠ALWAYS use freshly-squeezed lemon juice from an actual fresh lemon. Bottled lemon juice from the store will give your hummus a strange metallic or overly acidic taste. We want this dish to taste bright and fresh.

Ingredients:

  • 1 – 15 oz jar chickpeas, rinsed, drained, and peeled
  • 1 chipotle in adobo pepper
  • 2 tsps adobe sauce
  • 1 fresh garlic clove
  • 2 Tbsps tahini
  • 2 Tbsps extra virgin olive oil
  • 2 Tbsps freshly squeezed lemon or lime juice
  • 1/2 tsp sea salt

Optional, to Serve:

  • chipotle powder to garnish.
  • toasted sesame seeds to garnish
  • an extra swirl of extra virgin olive oil to garnish

Fresh Crunchy Veggies:

  • baby carrots, radishes, garden cucumbers, celery, sweet baby peppers, etc

Instructions:

Lay your drained chickpeas on a clean kitchen towel. Place a second towel over them. Use both hands to gently rub the towel over the chickpeas for about 30 seconds. Remove the top towel and discard the chickpea peels.

Transfer your peeled chickpeas into a food processor.

Add in the remaining ingredients. Process for about a minute, stopping halfway to scrape the sides of the food processor with a spatula.

Sprinkle lightly with chipotle powder, sesame seeds, and a swirl of evoo, if desired for added flavor and aesthetics.

Serve your chipotle hummus with fresh crunchy veggies and enjoy!
