Creamy Cilantro Lime Dressing
By popular demand, I’m sharing my homemade salad dressing recipes. This creamy cilantro is vibrant, tangy, garlicky, and just perfect for taco or tex/mex salads.
Experiment a bit, because I think this one has the FLAVOR to brighten up any salad!Makes about 2 cups (1 serving is 2 Tablespoons)
Ingredients:
- 3 cups cilantro leaves, stems removed and chopped
- 1 cup plain Greek yogurt
- 3-4 fresh garlic cloves, minced
- 2 tsps raw honey
- 1/3 cup lime juice (from 3-4 juicy limes)
- 1/3 cup olive oil
- sea salt and pepper to taste
Instructions:
In a food processor or blender combine cilantro leaves, yogurt, garlic, honey, and lime juice. Pulse just until smooth, do not over blend.
With the motor running, slowly add olive oil through the feed tube.
Season to taste with sea salt and pepper (I like 1/2 teaspoon sea salt and a pinch of pepper). Pulse until just combined, do not overblend.
Chill at least 20 minutes to allow flavors to develop.
Stays good refrigerated for up to one week.
Give it a good stir before using.
