  • about a half-pound of cleaned well, and dried well potatoes
  • 2 Tbsps olive oil, or avocado oil
  • garlic salt, to taste
  • freshly ground black pepper, to taste

How to make Baked Potato Skin Chips:

Preheat your oven to 400 degrees f. and line a large baking sheet with parchment paper or lay on a silpat.

To prepare the potato peels, scrub the potato skins very well, then pat dry, or allow to air dry, and then peel.

Place just the peels onto your prepared baking sheet and toss the peels with oil and seasonings until thoroughly coated. (Use your leftover potato for another use of course.)

Bake peels for 15-20 minutes, stirring halfway. Allow them to cool a bit, then enjoy! You can place them in a clean jar and save them for later.

Rachel’s Tips for Best Results

  • When you stir them up halfway through the cooking time, make sure they flip over to brown on both sides.
  • Bake them a little less or a little longer depending on whether you like them more or less crispy.
  • Sprinkle with salt as soon as you remove from the oven so the salt sticks to the olive oil.

Storage suggestions

These are best eaten right away. If you refrigerate them, then I suggest popping them into an air fryer quickly to warm and crisp them up before eating. You could also freeze them and then reheat them using the air fryer to crisp them up.

Are potato skin chips healthy?

By using the baking method instead of frying, these chips are already healthier than regular fried chips. But another healthy factor is that the potato skin is actually full of nutrients and fiber, potassium, and other antioxidants, making them healthier than the middle of the potato where normal potato chips come from.

Do I need to wash potatoes before peeling them?

Yes. Potatoes can be pretty dirty when you buy them from the grocery, so make sure you scrub them first, then pat them dry and peel them.

Why did my potato skins turn brown?

This may have happened if you did not cook them right away. Potato peels will oxidize if left on the countertop for long periods of time, so if you don’t plan to cook them immediately after peeling, then I suggest putting them in a bowl and covering them with water until you plan to use them.

Can I make these in the air fryer?

Absolutely! Use the same instructions for this recipe, but only cook the peels for around 5-8 minutes, making sure to shack the basket about halfway through.

  • garlic salt, to taste
