Flavorful Cheeseburger Stuffed Mushrooms

I’m flipping the classic cheeseburger on its head (or should I say, its cap?) with my Flavorful Cheeseburger Stuffed Mushrooms recipe!

These ‘shrooms are packed with all the juicy, meaty flavor of a traditional burger, but with a fun twist that’s perfect for a quick dinner or appetizer. Plus, they’re surprisingly easy to make!

Mushrooms have some pretty unique health benefits!

A big example: because they absorb vitamin D from the sun while they’re growing, they pass it along to you when you eat them … making them one of the few natural food sources of this important micronutrient!

Plus, mushrooms are loaded with antioxidants and other nutrients that may offer protection against diseases like cancer.

And they may also help you balance your blood sugar and gut health, and can be great for your thyroid and metabolism, too.

If you eat beef, you might want to consider making sure it comes from grass-fed cows!

A few highlights:
Grass-fed beef offers up to 5x the amount of omega-3 fatty acids as conventionally raised beef.

It’s also higher in conjugated linoleic acid (CLA), a type of fat that appears to be linked with a lower incidence of some chronic diseases.

Plus, it’s higher in vitamins A, E, and antioxidants compared to beef from cows that were fed grain.

You can buy grass-fed beef in most supermarkets … but a nearby farmer’s market can help you to find a great local source.

Because grass-fed is a little leaner than grain-fed beef, cook it at a lower temperature for a shorter time to avoid damaging the omega-3s.

Homemade ketchup recipe:

4 servings

Ingredients:

  • 6 medium portobello mushrooms
  • 1 lbs. ground beef or ground bison
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 2 tsps Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 onion powder
  • 1/2 cup freshly shredded cheddar

To serve:
homemade ketchup
dill pickles

Instructions:

Brush your mushrooms with a damp cloth to remove any dirt, then remove the stems. Using the tip of a spoon, gently remove the gills and reserve for another recipe (think casserole, pizza or omelet)

Preheat your oven to 350 degrees f. and spray a baking sheet with avocado oil spray.

In a bowl, combine the beef with all of the seasonings.

Fill your mushrooms with the beef mixture, gently pressing and spreading it to make the top flat as shown.

Bake for 18-20 minutes, or until the beef is just cooked through to your liking but not overcooked.

Top each with cheese. Bake for an additional 3 minutes just to melt the cheese.

Serve with homemade ketchup and pickles.

NOTE: This recipe works great on the grill too!
