Green Beans with Bacon and Fresh Mushrooms
Our Green Beans with Bacon and fresh Mushrooms is VERY TASTY and perfect for a quick weeknight dinner side dish, or an amazing addition to your weekly food prep meals, but also impressive enough to make for your holiday guests this upcoming Easter season.
💚Green beans are a veggie you don’t hear a lot about even though they’re one of the most popular on the planet.
They are a great source of vitamins A, C, and K, which can help support a healthy immune system, good eyesight, and great skin.
They’re also a good source of folate, a B vitamin that helps prevent serious birth defects.
Not to mention they contain FIBER … which carries lots of health benefits for your digestive system, heart, and so much more!
ðŸ†A little-known fact about green beans: they are considered a low FODMAP food, which means they can be easier for some people to digest.
How often do you eat green beans?

Mushrooms have some pretty unique health benefits!
☀ï¸A big example: because they absorb vitamin D from the sun while they’re growing, they pass it along to you when you eat them … making them one of the few natural food sources of this important micronutrient!
Plus, mushrooms are loaded with antioxidants and other nutrients that offer protection against diseases like cancer.
And, they may also help you balance your blood sugar and gut health, and can be great for your thyroid and metabolism, too.
Plus, their meaty “umami†flavor and texture make them a good addition to stir-fries, salads, and more!
What’s your take on mushrooms? Love, like, or leave them?

🥓We eat bacon a few times each month at our house because it’s something we (REALLY, REALLY) enjoy!
Note: There are many high-quality bacon options available these days. Look for nitrate-free and humanely raised if possible. Always read the ingredients so you know what you’re really buying.
4 servings
Ingredients:
- 4 slices thick-cut bacon, chopped
- 16 ozs button mushrooms, sliced
- 1 ½ lbs fresh green beans, trimmed
- 4 fresh garlic cloves, minced
- sea salt and black pepper, to taste
Instructions:
Preheat a large skillet over medium heat.
Cook your bacon until crispy, then transfer half of it to a paper towel lined plate to absorb the excess grease.
We’ll use that half to garnish our dish at the end. In the same preheated skillet with the remaining bacon, add your mushrooms and garlic.
Cook over medium-high heat for 5 minutes, or until the mushrooms start to release their juices.
Stir in the green beans and continue to cook, stirring often, until beans are tender, around 5 more minutes.
Season with sea salt and pepper and remove from heat. Sprinkle the remaining chopped bacon and freshly ground black pepper and serve.
Enjoy!
