Grilled Chicken + Mango Skewers
Fire up that grill because this one is going to be an absolute crowd pleaser 🔥
I’m not exactly sure why food-on-a-stick is so much fun to eat – but IT IS! It really is.
These chicken and mango skewers will brighten up your evening meal & make dinnertime feel like a party!
Consider doubling the recipe so you have lunches prepped & ready to go. Stays good in the fridge for 3-4 days.
When was the last time you 1) bought a mango or 2) ate anything with mango in it?

Ingredients:
- 1 lb boneless skinless chicken breasts
- sea salt and pepper, to taste
- 1 tsp cayenne pepper
- 2 ripe but firm mangoes, peeled and cut into 1-inch cubes
- 1 red onion, cut into 1-inch pieces
- 2 Tbsps unrefined coconut oil, melted
- fresh lime wedges, to serve
- fresh parsley, chopped, to garnish
- bamboo skewers soaked in water so they don’t burn or metal skewers
Instructions:
Soak your wooden skewers in water for at least 30 minutes, so they don’t burn on the grill.
Meanwhile; peel and chop the mangoes into 1-inch cubes. Cut the chicken into 1-inch chunks and sprinkle it with the seasonings.
Thread one chicken piece onto a skewer, followed by mango, onion, and so on, as shown in the photos.
Next, heat your grill pan or your outdoor grill to medium-high heat.
Lightly brush each skewer with coconut oil, then place them on your preheated grill.
Grill for 5-7 minutes on each side until chicken is just cooked through.
Garnish with freshly chopped parsley and serve with fresh lime wedges.
