High Protein Chicken + Zucchini Fritters

Packed with ground chicken, cottage cheese, and a boost of egg, these high-protein nutritious bite-sized fritters are completely craveworthy.

And the best part? They’re incredibly delicious, with the sweetness of zucchini and the savory herbs and seasonings, all wrapped up in a crispy golden fun-to-eat fritter.

You’ll have plenty to enjoy for meal prep or as a quick snack on-the-go throughout the week ahead.

These babies reheat easily on the stovetop, air fryer, or microwave. So go ahead, give your taste buds and your protein requirements a treat with these amazing High Protein Chicken Zucchini Fritters!

4 servings (around 20 fritters)

Ingredients:

  • 1 large zucchini (about 2 cups, grated)
  • 1 lb. ground chicken
  • 1 large egg, beaten
  • 1 cup cottage cheese
  • 2 fresh garlic cloves, minced
  • 1 tsp fresh squeezed lemon juice plus 1 teaspoon fresh lemon zest
  • 1 tsp dried or fresh dill weed
  • 1 tsp dried onion powder
  • ½ tsp sea salt
  • ¼ tsp black pepper
  • avocado oil, ghee, unrefined organic coconut oil, or tallow, to cook

Instructions:

Grate your zucchini, sprinkle lightly with sea salt, allow to sit for a few minutes, then squeeze out as much moisture as you possibly can.

Place your prepared zucchini in a large bowl. Add the ground chicken, beaten egg, cottage cheese, garlic, lemon, lemon zest, dill, onion powder, sea salt, and pepper. Stir well to combine.

Heat around 2 Tablespoons of oil or fat of your choice in a large skillet over medium heat.

Spoon mixture into the preheated pan and form into patties using a spatula.

The meat mixture will be quite soft, so it’s better to form them into the pan rather than by hand. I got around 20 small fritters.

Cook your fritters for 3-4 minutes per side, until browned and cooked through. Enjoy while hot.

Stays good in the fridge for up to 4 days, making them excellent for meal prep.

These reheat very well on the stovetop, air fryer, or microwave.
