High Protein Egg White Bites
Start your day off right with these fluffy, protein-packed, and DELICIOUS egg white bites!
The secret to recreate Starbucks egg bites famous light and airy texture? A clever steam bath technique that’s surprisingly easy to replicate in your oven at home.
By creating a steamy environment, you’ll end up with egg bites that are not only delicious but also incredibly tender and fluffy.
With a boost of high-quality protein from egg whites, cottage cheese/Greek yogurt, and beans, these bites are perfect for breakfast, snacks, or even post-workout fuel.
You can customize them with your favorite add-ins, from sun-dried tomatoes to crumbled turkey sausage or even crumbled bacon.

Ingredients:
- 2 cups liquid egg whites
- 1 cup cottage cheese or plain Greek yogurt
- 1/2 cup freshly shredded cheddar cheese
- 1 cup cannellini beans, rinsed and drained well
- 2 tsps Italian seasoning
- 1/2 tsp garlic powder
- sea salt and ground pepper, to taste
Optional add ins:
- 1/4 cup sun-dried tomatoes, finely chopped
- cooked crumbled nitrate-free bacon
- cooked crumbled turkey sausage
- handful chopped baby spinach
- diced mushrooms
- green onions or herbs
- diced peppers
Instructions:
Preheat your oven to 350 degrees f. and lightly spritz a 12-cup silicone egg bite muffin tray with avocado oil.
In a blender, or food processor, add the egg whites, cottage cheese, cheddar, beans, and seasonings.
Blend just until combined.
Divide your egg mixture equally among your muffin cups, filling each about 2/3 full.
Sprinkle the tops with any optional add-ins if using. Carefully prepare a steam bath in your oven by placing a large, rimmed baking sheet on the bottom rack of your oven.
Boil water on the stove then carefully pour the boiling water into the baking sheet filling it just halfway.
Carefully place your egg bites on a rack right above the steam bath. Bake for 18-22 minutes or just until set.
Carefully remove your egg bites from the oven once set but allow the baking sheet to cool completely before removing it from the oven as it’s full of very hot water.
Egg bites stay good in an airtight container in your refrigerator for up to 5 days.
