- 2 cups cottage cheese
- 4 large eggs, room temperature
- 2 scoops vanilla protein powder
- 1/4 cup pure maple syrup or raw honey
- 1 Tbsp fresh lemon zest
- 1/4 cup almond meal or flour
- 1/2 cup fresh or frozen blueberries, thawed
Instructions:
You’ll need 4 single serve oven safe ramekins. Spray or brush them lightly with avocado oil or ghee to prevent sticking.
Preheat your oven to 350 degrees f.
In a food processor or high speed blender add the cottage cheese, eggs, protein powder, maple syrup or honey, and lemon zest.
Process just until smooth but do not over process.
Place one tablespoon of almond meal at the base of each ramekin. You may leave this step out, but it does help to absorb excess moisture.
Pour your cheesecake mix equally into each remekin. Sprinkle with blueberries.
Place your ramekins on a rimmed baking dish and fill the dish with hot water. Bake for 25-30 minutes or until golden on top and just set.
Enjoy while warm or allow it to completely cool, as desired.
