Marinated Garden Tomato + Crisp Cucumber Summer Salad
Often simple things are the very best things. Wouldn’t you agree?
This marinated salad is as SIMPLE and as SUMMERTIME as it gets!
Pretty soon gardens and farmers markets will be bursting with tomatoes and cucumbers…so let’s enjoy them!
This type of salad will be on our plates most evenings throughout the summer.

Just add a piece of BBQ chicken or fish, and maybe some sautéed zucchini or summer squash and you’re set!
Ingredients:
- 1-1/2 lbs. mixed colors and sizes, fresh garden tomatoes, cut into wedges
- 2 large garden cucumbers, peeled and sliced into 1/4″
- 1 medium white onion, peeled and thinly sliced
- 2 Tbsps apple cider vinegar
- 2 Tbsps extra-virgin olive oil
- 1 Tbsp raw honey
- 1 tsp sea salt, or to taste
- 1/2 tsp freshly ground black pepper
Instructions:
Whisk together apple cider vinegar, extra virgin olive oil, honey, salt & pepper.
Add tomatoes, cucumbers, and onions into a large glass bowl. Drizzle with your apple cider vinegar mixture.
Gently stir to combine.
Refrigerate covered at least 2 hours, or up to 8 hours before serving.
Serve cold.

- Add tomatoes, cucumbers, and onions into a large glass bowl. Drizzle with your ACV mixture. Gently stir to combine.
- Refrigerate covered at least 2 hours, or up to 8 hours before serving.
- Serve cold.
