🧡Pumpkin pie filling and pumpkin puree often sit in cans or cartons right next to each other on the grocery store shelf. It can be easy to grab one, thinking it is the other because the two products look very similar.
However, they are *VERY* different products!
Pumpkin Puree (that can also be made at home very easily) should list ONLY Pumpkin on the ingredients label.
Pumpkin pie filling usually has many ingredients, one of which is lots of SUGAR.
🎃Homemade Pumpkin Puree
🍯Sweetness Factor is a very personal taste preference, so you may want to use more or less raw honey or pure maple syrup, depending on YOUR family’s specific taste preferences. You may find that your protein powder is sweet enough and leave out the honey/maple syrup altogether.
🥛Use ANY unsweetened/plain milk of your choice. My personal favorite for this recipe is unsweetened coconut milk or cashew milk. Any unsweetened nut milk, coconut milk, or high-quality grass-fed cow’s milk/cream all work really well here. Use what you personally like and have on hand.
Homemade Pumpkin Pie Spice Mix Blend:
1-1/2 Tbsps ground cinnamon
1 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp ground nutmeg

Nut-Free:
Use sun butter (sunflower seed) or tahini sesame seed butter) and omit the almond butter.
No Almond Butter:
Use peanut butter, macadamia nut butter, pistachio butter, cashew butter, or tahini (sesame seed butter) instead.

Ingredients:
- 1 cup pure pumpkin puree
- 1/2 cup natural almond butter
- 1/2 cup coconut flour
- 4 scoops vanilla protein powder
- 2 Tbsps raw honey or pure maple syrup, or to taste
- 1 Tbsp pumpkin pie spice mix blend, or to taste (recipe above)
- 1/2 tsp fine sea salt
- 1-2 Tbsps unsweetened milk of choice
Instructions:
In a large bowl, whisk the pure pumpkin puree together with your almond butter until smooth.
Add coconut flour, vanilla protein powder, raw honey, pumpkin spice, and sea salt. Stir well to incorporate, until you have a cookie-dough like consistency that holds together.
Add 1-2 tablespoons of milk to make your mixture a bit sticky.
Line a loaf pan with parchment paper and transfer the mixture, pressing it firmly into an even layer in the bottom.
Refrigerate for at least 30 minutes, then slice into bars.
