Philly Cheese Steak Stuffed Peppers

A QUICK brand-new CFC spin on a meal that will definitely make everyone feel HAPPY to be home tonight for dinner!

Ground beef is something I stock up on when I find a good sale, making this meal budget friendly.

Sauteing the onions and mushrooms together really gives these low-carb stuffed peppers all the satisfying flavors of that traditional cheesesteak you’re craving while keeping it lighter.

The entire family enjoyed these stuffed “cheesesteak” peppers! That’s a BIG win when you’ve got 6 teenagers/young adults at home!

This recipe is pretty versatile, so use the type of peppers, onions, and ground meat that YOUR family loves, and it’ll turn out GREAT!

Cheesesteak Stuffed Peppers 

Low Carb Philly Cheesesteaks

6 servings

Ingredients:

  • 3 large bell peppers halved through the stem, seeds and ribs removed
  • 1 lb lean ground beef or bison
  • sea salt and ground pepper, to taste
  • 1 large yellow onion, diced
  • 3 fresh garlic cloves, pressed or minced
  • 16 ounces mushrooms, sliced
  • 1 cup freshly shredded or sliced provolone or mozzarella cheese
  • 1 tsp chili flakes
  • fresh parsley, chopped to garnish

Instructions:

Preheat your oven to 400 degrees f.

Place your prepared peppers cut side up onto the baking dish as shown. Lightly spray or spritz with avocado oil and sprinkle with sea salt and pepper. Roast in your preheated oven for about 10-12 minutes.

Heat a large skillet over medium-high heat.

Add the ground meat and cook until no longer pink, stirring and mincing with a wooden spoon. Drain off excess grease.
Season lightly with sea salt and pepper.

Add the onions, garlic, and mushrooms, and cook for 5-6 minutes longer.

Sprinkle with chili flakes and remove from heat.

Stuff your peppers evenly with the meat mixture and top with cheese.

Return to the oven for 8-10 minutes, or until the cheese melts. Garnish with parsley and serve while hot.
