🍯Sweetness factor is a very personal taste preference, so you may want to use more or less pure maple syrup or raw honey depending on YOUR specific taste preferences.

However, they are *VERY* different products!

Pumpkin pie filling usually has many ingredients, one of which is lots of SUGAR.
🎃Homemade Pumpkin Puree
🥛Use ANY unsweetened/plain milk of your choice.
My personal favorite for this recipe is unsweetened coconut milk or cashew milk.
Any unsweetened nut milk, coconut milk, or high-quality grass-fed cow’s milk/cream all work really well here. Use what you personally like and have on hand.

💡You might have wondered if it was really that different from the “regular” bread on the bakery shelf.
✅ In a word: YES!
Sprouted grain bread is made from grains (seeds) that have begun to germinate or sprout.
This process boosts the bread’s nutrition profile AND makes it easier for your body to digest its nutrients.
The whole grains are usually combined with legumes (beans), which opens the door to a long list of nutrients not found in regular bread.
Plus, the sprouting process breaks down the starches in grains, which means lower carbs and gluten … but MORE fiber and protein.

Homemade Pumpkin Pie Spice Mix:
1-1/2 Tbsps ground cinnamon
1 tsp ground ginger
1/4 tsp ground cloves
1/4 tsp ground nutmeg
Combine well. Store in an airtight container. Use desired amount for recipes.

- 6 large eggs, room temperature
- ½ cup unsweetened milk of choice
- ½ cup pure pumpkin puree
- 2 Tbsps pure maple syrup or raw honey, plus more to serve
- 1 tsp pure vanilla extract
- 1 Tbsp pumpkin spice blend (recipe above)
- 1/4 tsp sea salt
- 8 slices Ezekiel bread
- 2 Tbsps organic unrefined coconut oil or grass-fed butter/ghee, to cook
To serve:
- fresh berries of choice
- pure maple syrup or raw honey
Instructions:
In a shallow pie plate, beat the eggs, milk, pumpkin puree, maple syrup, vanilla, pumpkin spice, and sea salt together until smooth.
Preheat a skillet over medium heat, and drizzle with a bit of coconut oil or butter.
Dip both sides of a slice of bread into your pumpkin-egg mixture. Allow the excess to drip back into the plate, then place in the heated skillet.
Repeat with one more slice. Cook the toast for 2 minutes per side, or until golden-brown and cooked through the center.
Working in small batches, repeat with the remaining slices of bread and egg mixture.
Serve hot with berries if desired and drizzled with maple syrup.
