The truth is, we use our outdoor grill year-round, even throughout the winter months. Kabobs and skewers cook well on an indoor grill as well, and they are SO fun to make for parties and get-togethers.

Each serving packs a whopping 35g of protein, making it a great option for those looking to boost their protein intake. Plus, salmon is rich in omega-3 fatty acids, which support heart health and brain function.

And the best part?

This recipe is quick and easy to make, requiring only 10 minutes of prep time and 6-8 minutes of cooking time.

🐟Wild salmon contains an antioxidant called astaxanthin, this is what makes the wild salmon meat a beautiful dark pink to red color.

It’s because of its natural diet!

Although wild-caught salmon typically costs a bit more than farmed salmon, it’s definitely worth its weight!

Wild-caught salmon has more vitamins, minerals, and anti-inflammatory benefits.

I typically will only purchase salmon when I’m perusing the seafood counter and notice wild-caught salmon happens to be on SALE….then it’s on at my house!

The fresh homemade pesto sauce adds a burst of flavor and nutrition, with healthy fats and antioxidants from the basil and garlic. And with only 4 ingredients, you can’t go wrong!

🌱Each time I make a batch of homemade pesto, I ask myself why I don’t make it more often?!!! It’s just SO good and really brightens up any meal!

Delicious Fresh Homemade Pesto

4 servings

Ingredients:

  • (10-inch) bamboo skewers or wooden skewers
  • 1/2 cup fresh pesto sauce https://cleanfoodcrush.com/delicious-fresh-homemade-pesto/
  • 1-1/2 lbs. skinless salmon filet, cut into 1-1/4-inch pieces
  • sea salt and ground pepper, to taste
  • 2 fresh lemons, very thinly sliced into rounds
  • 1/2 tsp crushed red pepper flakes

Instructions:

Soak your wooden skewers in water for at least 20 minutes, so they don’t burn on the grill.

In a large bowl, toss your salmon cubes with your fresh pesto sauce, coating well.

Sprinkle with a pinch of sea salt and pepper.

Allow to marinate for 20 minutes, covered in the refrigerator.

Thread your salmon onto bamboo skewers alternating with your thin lemon slices as shown.

Preheat your outdoor grill or an indoor grill pan to medium and grill the salmon skewers for 6-8 minutes per total, flipping halfway.
