Ingredients:
4 servings
- (10-inch) bamboo skewers or wooden skewers
- 1/2 cup fresh pesto sauce https://cleanfoodcrush.com/delicious-fresh-homemade-pesto/
- 1-1/2 lbs. skinless salmon filet, cut into 1-1/4-inch pieces
- sea salt and ground pepper, to taste
- 2 fresh lemons, very thinly sliced into rounds
- 1/2 tsp crushed red pepper flakes
Instructions:
Soak your wooden skewers in water for at least 20 minutes, so they don’t burn on the grill.

In a large bowl, toss your salmon cubes with your fresh pesto sauce, coating well.
Sprinkle with a pinch of sea salt and pepper.

Cover the salmon cubes with pesto and allow to marinate for 20 minutes, covered in the refrigerator.

Thread your salmon onto bamboo skewers alternating with your thin lemon slices as shown.

Preheat your outdoor grill or an indoor grill pan to medium and grill the salmon skewers for 6-8 minutes per total, flipping halfway.
