Rosemary Parmesan Roasted Sweet Potatoes
With just a few simple ingredients and easy preparation, this recipe brings out the natural sweetness of sweet potatoes and pairs it with the savory peppery goodness of rosemary and the rich nutty flavor of freshly grated Parmesan cheese.
Plus, sweet potatoes are packed with vitamins A and C, fiber, and antioxidants, making this dish a nutritious and delicious addition to any meal.
Not a week goes by that I don’t purchase and cook sweet potatoes or yams…they have become an absolute staple in our home.
This recipe is awesome if you’re trying to include sweet potatoes more often but just need a really tasty recipe – along with a little friendly nudge to try something different!

Ingredients:
- 2 lbs sweet potatoes or yams, peeled and diced
- 1 Tbsp avocado or olive oil
- 1 Tbsp grass-fed butter or ghee, melted
- 1 Tbsp minced fresh rosemary
- 3 fresh garlic cloves, minced
- sea salt and ground black pepper, to taste
- ¼ cup freshly grated Parmesan cheese
Instructions:
Preheat your oven to 400 degrees f. and line a large sheet pan with parchment paper.
Place your diced potatoes on the sheet pan.
Drizzle with the oil, melted ghee, then add minced rosemary, garlic, sea salt and pepper.
Toss well to coat, then spread evenly onto the pan.
Roast for 15-18 minutes.
Carefully sprinkle with the parmesan cheese, then broil for 2-4 minutes until melty.
