Sheet Pan Fresh Garden Green Beans + Sausage
This easy, one-pan is packed with flavor and nutrients, and can be ready in just 25 minutes.
Plus, it’s perfect for busy weeknights or meal prep.
Simply toss your favorite sausage and veggies (I’m using green beans, red bell pepper, and red onion) with some avocado oil and spices, and let your oven do the work.
The result is a deliciously tender and crispy sausage and veggie combo that’s sure to become a family favorite.
And the best part? Cleanup is a breeze!

For Meal Prep:
Simply add 1/2 cup of cooked brown rice, quinoa, and/or cauliflower rice, and an equal portion of your roasted Sheet Pan Green Beans + Sausage, to each food prep container.
Stays good in a sealed container in your refrigerator for up to 4 days.
So, is Sausage actually healthy?!
Can sausages be included as part of a healthy lifestyle? Absolutely! Yes.
Especially if you know what to look for:
A very easy rule to follow is to choose sausage with the fewest ingredients. Those are usually the healthiest choices.
I always read the ingredients carefully and choose based on that combined with what’s on SALE.
It’s a good idea to always check the packaging and look at the sodium content.
Ideally, choose the sausage with the lowest amount.
And if the sausage contains higher sodium, then we don’t need to add much additional salt to the meal as a whole.
I try to buy chicken or turkey sausages that are mostly the actual chicken or turkey meat, gluten-free, nitrate-free, no added sugar, and no weird stuff in general.
There are actually quite a few good options available these days! If you need help, be sure to ask your butcher for a recommendation.
Final thoughts: Obviously, we are not choosing sausage for every meal, rather including it here and there for variety, convenience, and affordability.
Green beans are a veggie you don’t hear a lot about even though they’re one of the most popular on the planet.
They are a great source of vitamins A, C, and K, which can help support a healthy immune system, good eyesight, and great skin.
They’re also a good source of folate; a B vitamin that helps prevent serious birth defects.
Not to mention they contain FIBER … which carries lots of health benefits for your digestive system, heart, and so much more!
A little-known fact about green beans: they are considered a low FODMAP food, which means they can be easier for some people to digest.

Ingredients:
- 1 lb. nitrate-free sausage of choice
- 1 1/2 lbs. garden fresh green beans
- 1 large red bell pepper
- 1 large red onion
- 2 Tbsps avocado oil or olive oil
- 3 tsps smoked paprika
- 2 tsps dried oregano
- 1 tsp ground cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- sea salt and ground pepper, to taste
- fresh parsley or basil, to garnish
- fresh lemon wedges, to serve
Instructions:
Preheat your oven to 425 degrees f. and line a large, rimmed sheet pan with parchment paper.
Slice your sausage into 1/4-inch-thick pieces, trim your green beans, chop the bell pepper into slices, and slice the red onion into thick half-moons.
Transfer the sausage and veggies to your prepared sheet pan.
Drizzle with oil and sprinkle with all the seasonings.
Toss well to get everything coated, then spread it all out into a single layer.
Roast in your preheated oven for 20-25 minutes, flipping everything with a large spatula halfway.
It’s done when the sausage is golden brown, and veggies are tender crisp.
Garnish with freshly chopped parsley and serve with lemon wedges.
