🍯Sweetness Factor is a very personal taste preference, so you may want to use more or less pure maple syrup or raw honey, depending on YOUR family’s specific taste preferences.
🥛Use ANY unsweetened/plain milk of your choice. My personal favorite for this pudding is unsweetened coconut milk or cashew milk. Any unsweetened nut milk, coconut milk, or high-quality grass-fed cow’s milk/cream all work really well here. Use what you personally like and have on hand.

Ingredients:
- 1/2 cup warm water
- 1/3 oz gelatin powder
- 1/2 cup pureed pure pumpkin
- 1 cup canned unsweetened coconut milk
- 1 tsp vanilla extract
- 1 Tbsp raw honey or pure maple syrup
- 1 tsp cinnamon
- 1 scoop collagen powder (optional)
Instructions:
In a medium bowl, combine your warm water and the gelatin powder.
Stir gently. Allow the gelatin to bloom for five minutes.
Meanwhile, in a small blender add your pumpkin puree, coconut milk, honey or maple syrup, vanilla, cinnamon, and collagen (if using). Blend until smooth.
Adding little by little at first, whisk or blend the pumpkin mixture into your gelatin mixture. Pour this combined mixture equally into ramekins or other small serving bowls.
Refrigerate (covered) for at least three hours or until set.
