Variations and Substitutions

🥛Use ANY unsweetened/plain milk of your choice. My personal favorite for this pudding is unsweetened coconut milk or cashew milk. Any unsweetened nut milk, coconut milk, or high-quality grass-fed cow’s milk/cream all work really well here. Use what you personally like and have on hand.

Mix-ins: Add your choice of mix-ins to make this sweet pumpkin recipe even more delicious. I personally love adding some bits of dark chocolate, walnuts for a bit of crunch, or a dollop of whipped cottage cheese topping.

Ingredients to make pumpkin pudding such as gelatin powder, pumpkin puree, coconut milk, vanilla extract, warm water, honey, cinnamon, and collagen powder.

Ingredients:

3-4 servings

  • 1/2 cup warm water
  • 1/3 oz gelatin powder
  • 1/2 cup pureed pure pumpkin
  • 1 cup canned unsweetened coconut milk
  • 1 tsp vanilla extract
  • 1 Tbsp raw honey or pure maple syrup
  • 1 tsp cinnamon
  • 1 scoop collagen powder (optional)

How to make Pumpkin Pudding:

In a medium bowl, combine your warm water and the gelatin powder. Stir it gently and allow the gelatin to bloom for five minutes.

Pumpkin puree, coconut milk, honey, vanilla, cinnamon, and collagen blended together in a blender cup.

Meanwhile, in a small blender add your pumpkin puree, coconut milk, honey or maple syrup, vanilla, cinnamon, and collagen (if using) and blend until smooth.

Gelatin added to other ingredients to make pumpkin pudding.

Adding little by little at first, whisk or blend the pumpkin mixture into your gelatin mixture. Pour this combined mixture equally into ramekins or other small serving bowls.

Refrigerate (covered) for at least three hours or until set.

  • You’ll need to plan ahead by 3 or 4 hours to allow your pudding to firm up in the fridge before serving. The result is an incredible silky pudding texture!
  • 🧡Make sure you are using “Pumpkin puree” and not “Pumpkin pie filling” they look the same, but the pie filling has WAY more sugar than we want!
  • 🍯Sweetness Factor is a very personal taste preference, so you may want to use more or less pure maple syrup or raw honey, depending on YOUR family’s specific taste preferences.
