Sweet Potato Good Morning Waffles

Looking for a breakfast recipe that’s both healthy and mouth-watering? Our Sweet Potato Good Morning Waffles are the best tasting waffles I’ve ever had. Made with cooked sweet potatoes, eggs, and oat flour, these waffles are packed with nutrients, fiber, and protein to keep you energized and focused throughout the morning.
The Power of Sweet Potatoes
Sweet potatoes are a superfood that’s rich in vitamins A and C, potassium, and fiber. They’re also high in antioxidants and have anti-inflammatory properties, making them an excellent addition to your breakfast routine.
These waffles are not only healthy, but they’re also incredibly delicious. The natural sweetness of the sweet potato pairs perfectly with the warmth of the cinnamon and nutmeg, while the chopped pecans add a satisfying crunch. Top with ripe bananas, a drizzle of raw honey or maple syrup, and a sprinkle of extra pecans for a breakfast treat that’s both nourishing and indulgent.
Make Ahead and Enjoy All Week
One of the best things about these waffles is that they’re easy to make ahead and enjoy throughout the week. Simply cook the sweet potatoes and prepare the batter the night before, set in the fridge, then cook the waffles in the morning for a quick and easy breakfast on-the-go. (I pull my batter out of the fridge 10 minutes before I’m going to cook my waffles – it works better when it’s not super cold)
Rachel’s Tips:
This recipe will also work well using butternut squash, pumpkin, or yams in place of the sweet potato.
How To Make Oat Flour:
Oat flour is the simplest flour to make at home, using whole rolled oats (old fashioned oats) and your high-speed blender or food processor.
2 cups of whole rolled oats equals about a cup of oat flour, or maybe a bit more, depending on how finely you grind it.
You may have to stop your machine and move the flour around with a spoon.
Process for at least 1 minute. You want your flour to be as finely and uniformly ground as possible.
What type of milk should I use?
Use ANY unsweetened/plain milk of your choice. My personal favorite for these waffles is unsweetened coconut milk, almond milk, or cashew milk. Any unsweetened nut milk, coconut milk, or high-quality grass-fed cow’s milk all work really well here. Use what you personally like and have on hand.
How To make your own Ghee:
Homemade Ghee
4 waffles
Ingredients:
- 1 large, sweet potato, cooked and peeled (about 1 1/4 cups sweet potato puree)
- 2 large eggs, room temperature
- 2/3 milk of choice
- 2 Tbsps melted ghee
- 2 tsps vanilla extract
- 1 1/2 cups oat flour
- 1 tsp baking powder
- 1 tsp cinnamon powder
- 1/2 tsp ground nutmeg
- 1/4 cup chopped pecans or walnuts
Instructions:
Bake your sweet potato at 400 degrees f. for about 45 minutes. Allow it to cool, then remove and discard the peel, then puree in a food processor or high-speed blender.
In a mixing bowl, whisk your sweet potato puree with the eggs, milk, melted ghee, and vanilla.
Add the oat flour, baking powder, and spices. Stir to combine the batter.
Fold in the chopped pecans. Set aside.
Preheat your waffle maker. Very lightly spritz with oil of choice.
Pour about 1/4 cup of batter per waffle, and cook until golden and crisp on the outside, around 5-6 minutes.
Serve with bananas, extra pecans and a drizzle of raw honey or maple syrup.
