🧀Cheese please:
Instead of buying pre-shredded mozzarella cheese, I like to find a block of grass-fed cheese or something made locally ON SALE and shred or grate it myself….or better yet enlist one of the kids for this duty.
Many pre-grated varieties are coated in strange additives (anti-caking & clumping garbage) that actually interfere with the natural texture and melting quality.
Homemade Mayonnaise:

Ingredients
Sweet Potatoes:
- 4 small, sweet potatoes, diced
- 1 tsp onion powder
- 1 tsp garlic powder
- sea salt and ground pepper, to taste
- 1 Tbsp avocado oil
Protein:
- 1 lb. lean ground beef or bison
- 1 medium sweet onion, diced
- 3 fresh garlic cloves, pressed
- sea salt and ground pepper, to taste
Homemade dressing:
- 1/4 cup homemade mayoÂ
- 1/4 cup Greek yogurt
- 2 Tbsps hot sauce
- 1 Tbsp Dijon mustard
Toppings:
- 1 head of lettuce, thinly sliced
- freshly diced tomatoes
- freshly shredded cheddar cheese
- small red onion, diced
- sliced or diced pickles
Instructions:
Preheat your oven to 400 degrees f. and line a large sheet pan with parchment paper.
Place your diced sweet potatoes on the pan and toss with onion powder, garlic powder, sea salt, pepper, and oil.
Arrange in a single layer. Roast for 20-25 minutes, until tender.
Meanwhile, heat a large skillet over medium heat.
Add the ground beef and cook, stirring and mincing it, for 5 minutes. Add the onion, garlic, sea salt and pepper.
Continue to cook until it begins to brown. Drain off excess grease. Cover to keep warm and set aside.
To make your sauce, add all the ingredients in a small bowl or jar and whisk until combined well.
To assemble your bowls add a layer of your roasted potatoes. Top with warm beef, then sprinkle the cheese. Drizzle with your sauce and top with desired toppings.
