Sweet Potato N’ Egg Skillet
Weekends done right! Heat up the skillet and try this TODAY!Makes about 3-4 servings
Ingredients:
- 2 medium sweet potatoes, cut into 1/2 inch cubes
- 1/3 cup organic corn, fresh or frozen
- 2 fresh garlic cloves, minced
- 2 Tbsp avocado oil, or olive oil
- 1 tsp smoked paprika
- 1 tsp ground cumin seed
- 2 cups fresh baby spinach
- 4 free range eggs
Instructions:
Preheat a large oven safe skillet over medium high heat.
Add in oil and diced sweet potato and cook stirring constantly for about 6-8 minutes until brown on all sides.
Season with sea salt and pepper then add seasonings, corn and cook for an additional 2-3 minutes.
Add in garlic and spinach and cook until the spinach is just wilted.
Makes 4 nice little spaces and gently crack the eggs into those spaces.
Heat oven to high broil, and set skillet inside with the oven door open just a crack to keep an eye on your eggs.
Broil on high for about 3-5 min or until eggs are to your liking.
