Tasty Sweet Potato Pizza

Get ready to indulge in a delicious and nutritious twist on traditional pizza!

Our Sweet Potato Pizza recipe uses sweet potatoes as the base instead of traditional dough.

Not only are sweet potatoes packed with vitamins A and C, fiber, and minerals, but they also add a sweet and crispy texture to this savory dish.

Surprisingly VERY VERY good!

Plus, this recipe is a great way to use up leftover chicken (or cooked ground turkey, pork, or beef) and customize with your favorite toppings like jalapenos and olives.

With only a few simple ingredients and a quick 25-minute bake time, this recipe is a perfect solution for a tasty and healthy meal that’s easy on the wallet and reduces food waste.

So go ahead, get creative, and enjoy the perfect blend of flavors and nutrition in every bite!

I made these with leftover chicken that I needed to use, but cooked ground turkey, chicken, pork, or beef sprinkled on these would also be great. You could also add nitrate-free pepperoni or bacon.

🧀Cheese please:

Instead of buying pre-shredded mozzarella cheese, I like to find a block of grass-fed cheese, or something made locally ON SALE and shred or grate it myself…. or better yet enlist one of the kids for this duty.

Many pre-grated varieties are coated in strange additives (anti-caking & clumping garbage) that actually interfere with the natural texture and melting quality.

Be sure to use YOUR favorite marinara sauce or good quality crushed tomatoes, because that’s where this dish gets a lot of its flavor!

When shopping for store-bought sauce:
I like to make sure the marinara has no added sugar (tomatoes naturally contain sugar, but there shouldn’t be sugar on the ingredients list.)

A good marinara sauce should contain only a few simple ingredients such as tomatoes, garlic, and herbs.

ðŸ…Rachel’s Homemade Marinara Sauce:

4 servings

Ingredients:

  • 4 medium-large sweet potatoes (about 2-1/2 lbs.), scrubbed well and dry
  • sea salt and ground pepper, to taste
  • 1 Tbsp Italian seasoning
  • 1 tsp garlic powder
  • 2 Tbsps avocado oil or olive oil
  • 1 cup marinara sauce
  • 1 cup freshly grated mozzarella cheese
  • 1 cup cooked chicken (rotisserie or grilled), chopped
  • sliced jalapeno, as desired
  • sliced pitted olives, as desired
  • crushed red pepper flakes, if desired

Instructions:

Preheat your oven to 375 degrees f. and line two large baking sheets with parchment paper.

Slice your sweet potatoes lengthwise into 1/2-inch-thick slices and sprinkle with sea salt, pepper, Italian seasoning, garlic powder, and a drizzle (or spritz) of oil.

Toss with your clean hands to evenly cover with oil and seasonings, then spread them evenly onto your prepared pans, allowing space between each.

Bake for 20 minutes, flipping halfway, until golden brown and crispy.

Top your potato crusts with pizza sauce, mozzarella, chicken, jalapeno, and olives as desired.

Turn your oven to BROIL and broil for 3-5 minutes, or just until the cheese is melted and golden on top.

Sprinkle with crushed red pepper flakes if desired.
