Ingredients:
- 1/2 cup high-quality balsamic vinegar
- 2 Tbsps raw honey
- 3 cups cubed watermelon
- 1 cup fresh blackberries
- 1/2 cup freshly shaved parmesan cheese
- 1/2 cup raw pecans or walnuts, coarsely chopped
Instructions:
Whisk your balsamic vinegar and honey together in a very small saucepan over high heat.
Bring to a boil, then immediately reduce heat to low, and simmer until the vinegar mixture has reduced about 8 minutes. Set aside to cool completely.
In a large serving bowl add the watermelon, blackberries, shaved parmesan, and pecans.
Drizzle with your homemade balsamic glaze as desired and gently toss.
