Zucchini Chip Nachos
Clean Party Food!
CRISPY FOR REAL!
I learned how to make them MUCH crispier!
Makes 1 Serving
Instructions:
- 1 medium zucchini
- 1 tablespoon olive oil
- Sea Salt to taste
Instructions:
Line a baking sheet with parchment paper or foil.
Using a sharp knife, very thinly slice the zucchini.
The thinner the slices, the better they’ll crisp up for you in the oven!Lay the slices out evenly on paper towels, sprinkle the tops of each lightly with sea salt. Use no more than ¼ teaspoon total for all the slices.
Allow the slices to sit 10 minutes. This will draw out the water so they’ll cook faster and help with their crispiness {YES!}.
Preheat oven to 225 f, and blot the slices dry with paper towels to remove any excess moisture.
Lay the slices evenly on the baking sheet (you may need to use more than one pan).
Brush the olive oil evenly over the tops.
They will shrink during baking.
Bake for about 2 hours, or until they’ve reached your desired crispiness.
Remove from the oven, let cool, then arrange your favorite Clean Toppings on the chips!
I love topping them with fresh pico, avocado slices, sliced grilled chicken breast, cilantro, chives, possibly a dollop of Greek yogurt.
