Air Fried Buffalo Potatoes

These crispy buffalo potatoes will be the highlight of your weekend! Is there anything better than a crispy potato? Well…if you love buffalo sauce like me, then YES. A crispy buffalo potato is the only thing better than a regular potato 🤣

Oh, for the love of potatoes! Yes, we do adore potatoes at our house! Spring through early summer ‘NEW’ potatoes are available at most local markets. Be sure to grab yourself some when you see them!

New potatoes are a bit smaller than mature potatoes, with softer, thinner skins (perfect skins for eating!) and a crisp texture. They are also lower in starch than mature potatoes. New potatoes usually retain their shape when cooked, which makes them an excellent choice for making these crispy air fryer buffalo potatoes.

🥔Potatoes are a WHOLE FOOD and a very nutrient-dense food option, especially for active people requiring higher carbs for energy!

These Buffalo Potatoes are an awesome side dish or snack idea for your kids & growing teens! I have 6 of ’em at home, and I gotta tell ya that potatoes sure stretch the family food budget with our large crew!

Did you know that potatoes are filled with more potassium than bananas, and they also contain fiber, vitamin C, vitamin B6, plus a little bit of iron and calcium?

💪🏾 Bonus Points: Eat the potato skin to capture all of the potato’s nutrition. The potato skin has more nutrients than the inside of the potato. It has lots of fiber, and about half of a medium potato’s fiber is from the skin.

🌶Oh yes… one more thing! If you’re buying All Natural Buffalo Style Sauce at the grocery store, check out those ingredients! Should only contain water, vinegar, and spices. I use Tabasco Buffalo sauce because there are only 5 REAL ingredients in Tabasco. Siete currently offers a good product as well.

🥗Try this with our Homemade Buttermilk Ranch Recipe

This recipe is NOT dairy-free. I have not had any luck duplicating this creamy flavor for any possible dairy-free alternatives…BUT… This homemade Ranch recipe is FABULOUS for those who LOVE that creamy Ranch flavor!

Makes about 1-1/2 cups, 2 Tbsps is a serving size

Homemade Buttermilk Ranch Ingredients:

  • 1/2 cup plain Greek yogurt
  • 1/2 cup organic grass-fed buttermilk
  • 1/3 cup mayonnaise, homemade, or store-bought avocado mayo
  • 3 fresh garlic cloves, minced
  • 4 Tbsps freshly chopped parsley
  • 4 Tbsps chives, chopped small
  • 1 Tbsp fresh squeezed lemon juice
  • zest from 1/2 fresh lemon
  • 2 tsps freeze dried, or fresh dill
  • 1/4 tsp sea salt
  • 1/4 tsp pepper

Homemade Buttermilk Ranch Instructions:

Whisk all dressing ingredients together very well, then refrigerate for an hour before serving.

Stays good refrigerated in a sealed container for about 6 days.

6 servings

Air Fried Buffalo Potatoes Ingredients:

  • 1 1/2 lbs baby new potatoes, washed
  • 2 Tbsps avocado oil or olive oil
  • sea salt and ground black pepper to taste
  • 1 tsp garlic powder
  • 2 tsps smoked paprika
  • 1/2 cup buffalo sauce
  • 1/2 cup crumbled blue cheese, like stilton
  • 2 green onions, sliced

Optional:

  • homemade buttermilk ranch dressing recipe above

Instructions:

Chop your potatoes into bite-sized pieces and place them in a bowl.

Add oil and the seasonings, then toss well to combine.

Preheat your air fryer to 400 degrees f.

Air Fry the potatoes for 18-20 minutes, shaking the basket to flip your taters halfway.

Once the potatoes are crisp on the outside and fork-tender inside, transfer them to a large bowl. Drizzle them with the buffalo sauce and gently toss to coat.

Top with crumbled blue cheese and green onions.

Serve with ranch dressing, if desired.
