Avocado Chicken Lettuce Wraps 🥑🥬

If you’re looking for a really great, fresh-tasting lunch idea, we’ve TOTALLY got you covered here!

These simple lettuce wraps are so perfect for summertime to keep things light with minimal cooking and prep.

These are SUPER TASTY and very satisfying thanks to the high protein & healthy fats.

You can create your chicken salad mixture the night before, set it in the fridge, then before heading out the door the next morning, assemble your wraps. Add your avocado right before serving.

🍋 ALWAYS use freshly-squeezed lemon or lime juice from actual fresh citrus. Bottled lemon/lime juice from the store will give your chicken salad a strange metallic or overly acidic taste.

We want this to taste bright and fresh.

Want to get the most juice possible from each of your fresh lemons & limes? Of course, we do! Here’s a quick trick:

On your counter or a cutting board, press and roll the lemon back and forth very firmly with your hands.

The rolling loosens and breaks down some of the citrus membranes and makes the outside a little more pliable. This makes it easier to squeeze which also means you’ll likely get more juice from your squeeze.

4 servings

Ingredients:

  • 3 cups cooked chicken, shredded (rotisserie or poached)
  • ¼ cup plain Greek Yogurt
  • ¼ cup homemade mayonnaise
  • 1 Tbsp dijon mustard
  • 2 large shallots or 1 small red onion, finely diced
  • 1 fresh garlic clove, minced
  • a large handful of fresh cilantro or parsley leaves, minced
  • zest and juice of 1 lemon
  • sea salt and freshly ground black pepper, to taste
  • 1 small avocado, diced
  • butter lettuce leaves, to serve
  • chili flakes, to sprinkle

Instructions:

Using 2 forks, shred the chicken and place it in a large bowl.

Add in the yogurt, mayo, mustard, shallot, garlic, lemon juice, and zest.

Season with sea salt and pepper to taste and stir to combine.

Create lettuce boats by doubling up two lettuce leaves so they are sturdier.

Fold in the avocado, then spoon it into your lettuce leaves.

Sprinkle with some chili flakes, if desired, and serve immediately.
