Bacon Wrapped Avocado Fries RecipeMakes about 4-6 servings
Ingredients:

  • 2 medium, ripe-but-firm avocados, cut in halves pit removed
  • 2-3 fresh lemon wedges
  • freshly ground black pepper
  • 16 thin strips of pasture-raised, nitrate-free bacon

Bacon Wrapped Avocado Fries Healthy SnacksInstructions:

  1. Preheat the oven to 375 degrees f and line a baking sheet with parchment paper.
  2. Slice the avocado into thin wedges lengthwise, about 4 per half, as shown.
  3. Gently remove the peel from the avocado slices then wrap each one with a strip of bacon, and place on the baking sheet.
  4. Depending on how thin your bacon strips are, bake for 10-15 minutes or until the bacon is crispy.
  5. Sprinkle with freshly ground black pepper and serve with a squeeze of lemon.
