BBQ Chicken Tortilla Pizzas
Pizza tonight anyone?!!ðŸ•
Tortilla Pizzas are one of my favorite life hacks because they are super quick, affordable, EASY, usually much healthier, and SO good!
If you haven’t ever tried doing this yet, prepare to be surprised by how satisfying they are!
I’ll often serve these with a big side salad for a quick lunch or family pizza night on the weekends.
You’ll be enjoying your pizza faster than you can get it delivered!
Try this at home:
Ezekiel tortillas, Siete tortillas, Whole wheat, or GF tortillas of choice.
Ezekiel tortillas can be found in the freezer section at many grocers and health food stores.
I preheat my oven to 450 OR turn on the Broil feature if possible.🌡
Add a few tortillas to a sheet pan, and pop them in the oven for just a minute or two to crisp up first, flipping once.
Carefully remove from the oven, then top with sauce, remaining toppings, and cheese.
Place your assembled pizzas back into your preheated oven, for just a few minutes until the cheese is nice and melty (keep an eye on them!)

Homemade BBQ sauce:
Ingredients:

2 whole wheat or Ezekiel tortillas

1 white onion, diced

6 ozs of cooked chicken, shredded

1/2 cup of barbeque sauce, divided

2 tsps of balsamic vinegar

½ cup of cherry tomatoes, sliced
-
4 ozs of mozzarella cheese, grated
-
2 oz of Parmesan cheese, grated
-
optional: fresh cilantro leaves
Instructions:
Begin by preheating your oven to broil.
Place the tortillas under the broiler for around 1 minute, or until they are lightly toasted all over – remember to watch the tortillas carefully as they will burn very easily. Sometimes I carefully flip them to get both sides crisp.
Once crispy, carefully remove from the oven and set aside.
To soften the onion, over medium heat, lightly spritz a skillet with olive oil and gently sauté the diced onion for 5 minutes.
While the onion cooks, add your shredded chicken to a bowl and combine it with half of the barbeque sauce and balsamic vinegar.
To assemble your pizzas, spread the tortillas evenly with the remaining barbeque sauce and sprinkle on the chicken, onions, and tomatoes.
Top evenly with the grated mozzarella and Parmesan before placing your pizzas back in the oven.
