Breakfast Fruit + Yogurt Bake 🍓
GORGEOUS recipe idea for Sunday brunch, but this fruit and yogurt bake is also easy enough to make any day of the week!
Take just a few minutes to combine your ingredients, throw it in the oven, go shower, then by the time you’re ready for the day – breakfast is ready too!
This protein-packed Breakfast Fruit and Yogurt Bake is so delicious and just perfect for those who love something a little sweet in the morning.
This makes for an awesome snack any time of the day.
Think quick post-workout treat or an after-school snack to make with the kids!
➡️How To Make Oat Flour
Oat flour is the simplest flour to make at home, using whole rolled oats (old-fashioned oats) and your high-speed blender or food processor.
2 cups of whole rolled oats equal about a cup of oat flour, or maybe a bit more, depending on how finely you grind it.
You may have to stop your machine and move the flour around with a spoon.
Process for at least 1 minute. You want your flour to be as finely and uniformly ground as possible.
🍯 The sweetness factor is such a PERSONAL preference, so please consider this when adding in the honey, or maple syrup. Depending on your taste, you may want a bit more or less.

Ingredients:
- 2 cups plain Greek yogurt
- 4 large eggs
- 1/4 cup raw honey or pure maple syrup, plus extra to serve
- 1/2 cup oat flour or ground oats
- 1 tsp vanilla extract
- 1 cup mixed fresh berries, plus extra fruit to garnish
Instructions:
Preheat your oven to 350 degrees f. and lightly spray or brush an 8×8 baking dish with coconut oil cooking spray.
In a large mixing bowl, add the yogurt, eggs, honey, oat flour, and vanilla. Whisk until smooth.
Gently fold in the fresh berries.
Transfer the batter to your prepared baking dish.
I added a few extra berries to the top at this point, but that’s optional.
Bake for 35-40 minutes, or until fully set in the center.
Once the yogurt bake is finished baking, remove it from the oven and allow it to completely cool before slicing.
Serve with extra yogurt, honey, and fruit as desired.
Wrap leftovers tightly in plastic wrap and store in the refrigerator for up to 3 days.
