Cashew Butter Apple Slice Snacks
Our kids + teens (plus a few friends) are in the kitchen after school today making these snacks, while I work on Dinner.
Set out several variations of these ingredients, depending on YOUR tastes, and let the kids build their own!
Try almond butter, or peanut butter, and YOUR favorite chopped nuts.
Maybe even dark dark chocolate chunks or cacao nibs if you’re feeling like it!
Makes 4 servings
- 2 apples of choice, cored and sliced about 1/2 inch thick as shown
- 1/3 cup Greek yogurt
- 2 Tbsps cashew butter
- 1 Tbsp raw honey
- 1 tsp vanilla extract
- 2 Tbsp dried cranberries, or raisins
- 2 Tbsp raw cashews, chopped
In a small bowl mix yogurt with cashew butter, honey and vanilla. Whisk well to combine.
Spread about 2 teaspoons of this mixture on each apple slice, then top with cranberries and cashews.
