Clean Baked Cod in Tomatoes and OlivesA SIMPLE recipe to warm up those bellies with a nice Clean meal 🙂 Baked Cod in Tomatoes and Olives Recipe
Makes 3-4 servings
Ingredients:

  • 1 lb. cod fillets
  • 1 Tbsp avocado oil, or extra virgin olive oil
  • 3 small fresh garlic cloves, minced
  • 1 small yellow onion, finely chopped
  • 1 red chili, and finely chopped
  • 2 small sweet peppers, chopped
  • 1/3 cup green olives
  • 1 15oz. jar fire roasted tomatoes
  • sea salt and fresh cracked pepper, to taste
  • 1 Tbsp high quality balsamic vinegar
  • a small bunch of fresh chopped parsley leaves

Eat Clean Baked Cod in Tomatoes OlivesInstructions:

  1. Preheat the oven to 375 degrees f.
  2. Heat the oil in a cast iron (oven safe) skillet, then add onion, sweet peppers, garlic, and chili and saute for about 5 minutes, until the veggies soften a bit.
  3. Add the tomatoes, olives, balsamic vinegar and season with salt and pepper to your taste.
  4. Cover and simmer for 5 minutes, then add the cod fillets, nestling them evenly into the sauce.
  5. Cook in the preheated oven for 12-15 minutes, or until fish is cooked through and flakes easily.
  6. Garnish with fresh chopped parsley and enjoy!
