Crispy Smashed Herb Roasted Potatoes
Skip the fast food takeout this weekend, and make these for a FUN little project at home instead!
Makes about 6 servings
Ingredients:
- 2 lbs new baby potatoes, cleaned and pat dry
- 2 Tbsps avocado oil, or olive oil
- 1 Tbsp fresh thyme
- sea salt and pepper to taste
Instructions:
Preheat the oven to 400 degrees f.
Place the potatoes on a flat, rimmed baking sheet, and pour in 3/4 cup water.
Cover tightly with foil then bake for about 25-30 minutes or until fork tender. Drain any remaining water.
Drizzle potatoes with oil then toss to coat well and space evenly on the baking sheet.
Place a 2nd baking sheet on top of it, then press it down, until all the potatoes are smashed to about 1/2 inch thick.
Sprinkle with the thyme, and season with sea salt and pepper.
Return to the 400 degree oven and cook, uncovered for an additional 25-30 minutes.
