A Summertime FAVORITE! Try this one at your next outdoor party or family picnic!Makes 4-6 servings
Ingredients:
Preheat a very clean outdoor grill to high heat and lightly oil grates.
Once cooled a bit, cut the corn off the cob and place kernels in a large serving bowl.
Add the tomatoes, garlic, bell peppers, avocado, jalapeño pepper, cilantro, lime juice, sea salt, and pepper, then gently combine.

Ingredients:
- 4 fresh, corn cobs (local/organic if possible)
- 4 vine ripe tomatoes, diced
- 2 fresh garlic cloves, minced
- 1 red or green bell pepper, seeds removed and diced
- 1 large avocado, diced
- 1 jalapenio pepper, seeds removed and finely diced
- 1/4 cup packed cilantro leaves, chopped
- 1/4 cup fresh lime juice
- sea salt and pepper to your taste
- 1/4 cup crumbled feta cheese (optional)
Instructions:

Grill the corn, turning occasionally, until it’s charred and cooked through, about 10 minutes total.
Once cooled a bit, cut the corn off the cob and place kernels in a large serving bowl.
Add the tomatoes, garlic, bell peppers, avocado, jalapeño pepper, cilantro, lime juice, sea salt, and pepper, then gently combine.
Crumble feta on top if desired to serve.
