Delicious Grilled Sweetcorn Salsa

Ingredients:

  • 4 fresh, corn cobs (local/organic if possible)
  • 4 vine ripe tomatoes, diced
  • 2 fresh garlic cloves, minced
  • 1 red or green bell pepper, seeds removed and diced
  • 1 large avocado, diced
  • 1 jalapenio pepper, seeds removed and finely diced
  • 1/4 cup packed cilantro leaves, chopped
  • 1/4 cup fresh lime juice
  • sea salt and pepper to your taste
  • 1/4 cup crumbled feta cheese (optional)

Grilled Sweetcorn Salsa Ingredients Instructions:

  1. Preheat a very clean outdoor grill to high heat and lightly oil grates.
  2. Grill the corn, turning occasionally, until it’s charred and cooked through, about 10 minutes total.
  3. Once cooled a bit, cut the corn off the cob and place kernels in a large serving bowl.
  4. Add the tomatoes, garlic, bell peppers, avocado, jalapeño pepper, cilantro, lime juice, sea salt, and pepper, then gently combine.
  5. Crumble feta ontop if desired to serve.
