Ingredients:
- 1 lb. ground chicken, ground turkey, or ground beef
- 1/2 cup cottage cheese
- 1/2 cup almond flour, oat flour, or breadcrumbs
- 1/4 cup freshly grated Parmesan cheese
- 1 large egg, room temperature
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 Tbsp Italian seasoning
- 2 Tbsps avocado oil, tallow, ghee, or olive oil, for cooking the meatballs
Sauce:
- 2 Tbsps ghee or grass-fed butter
- 4 fresh garlic cloves, sliced
- 2 cups ripe cherry tomatoes
- 1/3 cup of your favorite wine or chicken broth
- 1 tsp dried chili flakes
- sea salt and ground pepper, to taste
- freshly chopped parmesan to garnish
- optional: fresh herbs to garnish
Instructions:
In a large bowl, add all the ingredients for the meatballs, except the oil, and stir well to combine.
Form into 1 tablespoon-sized meatballs. A cookie scoop works great for this.
Heat your oil of choice over medium-high in a large heavy bottomed skillet and cook the meatballs until nicely golden brown on all sides. Set aside and cover to keep warm.
In the same preheated skillet over medium heat add the ghee and garlic, then sauté for 1 minute.
Add in the cherry tomatoes and wine; cook while stirring until tomatoes begin to split and burst. Sprinkle with chili flakes, sea salt, and pepper to taste.
With the back of your wooden spoon, carefully smash some of the tomatoes to form a delicious sauce.
Nestle your cooked meatballs into the sauce and simmer for a couple of minutes to heat up.
