- 1/4 cup clarified butter (Ghee), or coconut oil
- 1/4 cup raw honey
- 6 fresh cloves garlic, crushed
- 2 fresh limes, juiced
- 2 lb. salmon filet
- sea salt, pepper, to taste
- fresh lime slices (to serve)
- 1/3 cup fresh chopped cilantro, or parsley, divided
Position rack in the middle of the oven, and preheat to 375°f .
Line a baking sheet with a large piece of foil.
In a small saucepan, melt the oil/butter over low heat.
Add honey, crushed garlic and lime juice, and whisk until the honey has melted and the mixture is completely combined.
Place the salmon in the center of the foil.
Evenly pour the honey-lime sauce over the salmon. Sprinkle with sea salt, pepper, and half of the cilantro/parsley.
Fold the sides of the foil up beside the salmon to keep the sauce on the fillet.
Bake until cooked through and flaky (about 20 minutes, depending on the thickness of your fish).
Garnish with cilantro/parsley and serve with fresh lime wedges.
