Ingredients:

  • 1 pound large raw shrimp, peeled and deveined
  • Juice of fresh ½ lemon
  • 1 Tbsp minced garlic
  • 1 tsp chili flakes
  • ground pepper, to taste
  • 2 eggs, soft boiled (or poached)
  • 6 cups Romaine lettuce, leaves washed and dried
  • ½ avocado, sliced
  • ¼ cup shaved parmesan cheese 

Dressing:

  • ¼ cup plain, non fat Greek yogurt
  • 1 Tbsp olive oil
  • 1 garlic clove, minced
  • 1 Tbsp lemon juice 
  • sea salt and pepper to taste

Garlic Shrimp Caesar Salad RecipeInstructions:

  1. In a medium bowl, combine the shrimp with the lemon juice, garlic, salt and pepper. Allow to marinade for 10 minutes or so while preparing your other ingredients.
  2. Heat a skillet or a non-stick pan with a light drizzle of oil. Cook the shrimp for 2-3 minutes on each side, then set aside on a plate.
  3. To make the dressing, add all the ingredients to a jar, fit with a tight lid and shake until well combined.
  4. To make the salad, assemble the lettuce with shrimp, avocado slices and shaved parmesan cheese. Pour over the dressing; mix well to combine.
  5. Gently slice the egg and arrange on top.
  6. Season with freshly grounded pepper and chili flakes.
