Ham n’ Egg Loaded Sweet Potatoes
Mmmm…roasted potato skins. They are impressive looking – but pretty darn SIMPLE to make!Makes about 3-4 servings
Ingredients:
- 3 medium sweet potatoes
- 3 oz. turkey ham, or nitrate-free, high quality ham, thin sliced
- 6 free range eggs
- sea salt and pepper
- 2 Tbsp fresh chopped parsley, or chives
Instructions:
Preheat oven to 400 f. degrees.
Slice each potato in half, spray skins very lightly with coconut, avocado, or olive oil and place them on a baking tray lined with baking paper or foil.
Roast for about 20 minutes until the potatoes are softened.
Let them to cool down a bit on the tray, then scoop out the insides leaving a thin layer all the way around.
Reserve potato for another use.
Fill the bottom of each skin with ham.
Carefully crack an egg into each skin. Sprinkle with sea salt and pepper.
Bake at 400 degrees for 12-15 minutes or until eggs are set to your liking.
Remove and garnish with fresh chopped herbs.
