Honey Roasted Peaches

If you’ve ever eaten a ripe-juicy peach just picked from its tree, you know it’s a real treat!

We love getting fresh peaches from any of the local farmers’ stands here in Utah during the late Summer months.This is one of my favorite easy dessert ideas during those months when peaches are bursting off the branches.

Not only is this one of the simplest recipes, but these peaches smell heavenly while baking…

I suggest you throw some in your oven ASAP while the gettin’s still good.


Makes 6 servings

Ingredients:

  • 3 large ripe peaches — halved and pitted
  • 1/4 cup raw honey, or pure maple syrup
  • 1 vanilla bean; seeds of
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp ground nutmeg
  • a pinch of sea salt

Optional topping ideas: Greek or coconut yogurt, Whipped coconut cream, chopped walnuts, chopped pecans, granola, fresh mint leaves, etc.

Instructions:

Preheat your oven to 350 degrees f. In a small bowl, whisk honey, freshly scraped vanilla seeds, cinnamon, clove, and sea salt.

 Place your halved peaches cut side up into a baking dish that’s just big enough to fit them all, as shown. Spoon your syrup on top of the peaches, making sure they all get coated.Bake peaches in your preheated oven, uncovered, for 25-30 minutes, or until golden and tender. Add your favorite toppings and enjoy!
