Mixed Berry Sorbet

Completely refreshing homemade Summertime treats! My FAVORITE type because..well…I have major control issues…

I like to control the quality of ingredients that go into my family’s food! You as well?!

The thing is: Frozen Berries are super affordable, highly nutritious, already pre-washed, and often a big ole’ bag of organic berries can be found at Costco or other bulk retailers, making this icy treat SUPER affordable too!

I LOVE the bright addition of fresh lemon to this recipe, and I really think you’ll enjoy it!

Sweetness factor is such a PERSONAL preference, so please consider this when adding in the honey.

If you typically do not like things overly sweet add only 1 Tablespoon or skip the honey altogether.

If you LOVE yo’ sweets, that’s ok…stick with the 2 Tablespoons.

Go a step further and include a bit of lemon zest, and garnish with fresh mint leaves!

Makes 4 servings

Ingredients:

  • 2 1/2 cups mixed frozen berries
  • 2 tsps fresh squeezed lemon juice
  • 1-2 Tbsps raw honey, or pure maple syrup
  • 2-3 Tbsps warm water, only if needed

Instructions:

Place all of your ingredients, except for the warm water, into a high-speed blender or food processor. (I LOVE my Blendtec for this!)Process by pulsing until smooth and creamy, stopping to scrape the sides several times, and adding just a touch of warm water if needed.Transfer the sorbet mixture to a freezer-safe container, cover and freeze for at least 2-3 hours before serving.

Use an ice cream scoop to dish your sorbet into small serving dishes.

Garnish with fresh berries and enjoy!
