Quick 4th of July Green Salad

Something kinda fun I threw together for a backyard party this week so I thought I’d share!

Lots of delicious flavors & it’s super simple to put together! Excellent addition to your party table this weekend!

Since there are only a few simple ingredients used here, I really recommend using the absolute freshest, highest quality ingredients you can get your hands on…it makes all the difference.

🇬🇷Feta is Greece’s most famous cheese (and my favorite!) Many say it’s also the healthiest.

🐐Usually made from sheep or goat milk (or a combo), Feta cheese is nutrient-rich. Feta is said to be easier to digest and less allergenic and inflammatory than cheeses made from cow’s milk, which makes it a good option.

10 servings

Ingredients:

  • 1 large red onion, diced
  • 10 cups fresh baby arugula, baby spinach or mixed greens
  • 3 cups cherry tomatoes, halved
  • 2-8 oz feta cheese blocks, cut into 1/2-inch cubes

Dressing:

  • 1/4 cup white wine vinegar
  • 1/3 cup extra virgin olive oil
  • 2 Tbsps Dijon mustard
  • 1/2 tsp fine sea salt
  • 1/4 tsp freshly ground black pepper

Instructions:

On a large rectangular platter, arrange the arugula in an even layer as shown.

For the “stars”, arrange your diced red onion at the top left corner.

For the “stripes”, top the arugula in alternating rows with cherry tomatoes and cheese cubes as shown.

In a small jar or bowl, add all the dressing ingredients and shake to emulsify.

Drizzle your dressing over the salad and serve.
