Sweet & Spicy Chicken Bites
These are a phenomenal Football Party Snack…OR….FUN weeknight Dinner idea for the whole family!
Aren’t these such a fun idea!? I want to know if your family loved them as much as mine did.
Makes about 4 servings
Ingredients:
- 2 ¼ cups almond flour
- ½ tsp sea salt
- ¼ tsp pepper
- 2 eggs
- ¼ cup gluten free flour
- 1 lb chicken tenders
- 1/2 cup raw honey
- 1 Tbsps chili powder
- 1 tsp ground cumin
- 1/2 cup organic tomato puree, no added sugar/salt
- ½ tsp garlic powder
- Optional: Greek yogurt or sour cream for dipping
Instructions:
Preheat the oven to 425 degrees. Line a baking sheet with parchment paper.
Place the almond flour, sea salt and fresh cracked pepper into a bowl and whisk it together.
Whisk the eggs in another bowl.
Dip the chicken tenders, one at a time, into the flour, then into the egg, then into the almond flour. Place the chicken tenders on the prepared baking sheet. Bake for 20 minutes, or until it’s crispy and beginning to golden brown.
While the chicken is baking, prepare the sauce. In a small frying pan over high heat bring the honey, tomato puree, chili powder, cumin, salt and garlic powder to a boil then set it aside.
Dip each of the chicken tenders in the sauce then lay them back on the baking sheet.
Put the chicken back in the oven for 2-3 minutes for the glaze to caramelize slightly.
