This yummy parfait is a delicious breakfast idea and a great source of probiotics and only uses natural sugars! These would also be fun in jars or sent to school in tupperware for school lunches 🙂
Makes 2-3 servings
- 1 cup Greek yogurt
- 3-4 Tbsps raw honey
- 1 tsp vanilla extract
- 1/2 cup fresh pineapple to pulse,
- 1/4 cup fresh pineapple, chopped for garnish
- 1/2 cup mixed berries
- Fresh mint to garnish
- Place 1/2 cup pineapple, vanilla and honey in a food processor and pulse for about 2 minutes, until you have a smooth puree. Mix the puree with yogurt.
- Pour the yogurt parfait in wine or dessert glasses, add chopped pineapple, berries and garnish with mint.
